Baked Apples

This recipe is so simple, so light, and so delicious. I like to top mine with vanilla yoghurt and maple syrup or honey. Vanilla ice cream is another great choice.

Baked Apples

Not just for Autumn, these are amazing year-round! Serves 2

2 large firm apples, such as gala, Fuji, Granny Smith, or Pink Lady

2 tbsp (or 30 ml) of pure maple syrup

1/4 tsp (or 1.25 ml) of ground cinnamon

1/4 cup (or 60 ml) of oats

Additional maple syrup

1) Preheat the oven to 350°F/175°C. Lightly grease or oil a baking dish with a cover. Core the apples (this is easy with an apple corer, but if you don't have one, you can carefully use a long knife to cut out the core in a square shape). Turn the apples on their side, then slice them into thin slices, 3/4 of the way through. The trick is to not cut the apples all the way through so they hold their shape. Place the apples, cut-side up in the dish.

2) Mix the maple syrup, cinnamon and oats together, then carefully tuck a little of the mixture between each apple slice. The filling will be sparse; just make sure to divide evenly between the apples. Cover the dish.

3) Bake for 20-25 minutes, or until just starting to soften. Uncover, drizzle with more maple syrup, then continue to bake until fully tender, another 10-15 minutes. Serve warm.
